BLUEBERRY MUFFINS
(Makes a dozen muffins)

Muffins:
1 cup oat flour
1 cup almond flour
¼ tsp salt
¾ tsp baking soda
2 eggs
⅓ maple syrup (dark)
1 tsp vanilla
½ cup almond milk
1 tbsp coconut oil
Blueberries
Lemon zest/juice
You will need:
Mixing bowl
Muffins tin
Muffin liners or oil
Directions:
Muffins: Preheat the oven to 350. In a mixing bowl combine all of the ingredients and make a batter. Once mixed, pour the batter into a prepared muffin dish that is either greased or lined. Bake for 20-25 minutes or until golden brown on top. Let cool and enjoy!
Level-Up ideas:
- Crumble topping: make a simple crumble (flour of choice, pinch of salt, butter or coconut oil, sweetener or sugar- mix until crumbly) and top your muffins with it before baking.
- Add crunch: mix in or top your muffins with different nuts/seeds for flavor and crunch.
- Try different flavors: use different fruits or citrus, add chocolate, add cinnamon, etc.
Leftovers/Meal Prep: Store your muffins in an airtight container. Store in the fridge for the next week or so to enjoy!
