BUFFALO CAULIFLOWER BITES

Cauliflower:

1 head of Cauliflower


Batter:

1 1/3 cup of almond milk

1 cup of almond flour


Breadcrumbs:

Panko crumbs


Buffalo:

Buffalo or hot sauce


You will need:

Baking sheet

Cooking oil


Directions:

Cauliflower bites: Preheat the oven to 320. Prepare batter and breadcrumbs in separate containers for the two dipping stations, feel free to add any seasonings to both the batter and the breadcrumbs. After cutting the cauliflower to florets, dip into the batter and then dip into breadcrumbs. Placing them on an oiled baking sheet, make sure none are stacked on top of each other. Bake for 20 minutes, take out and brush buffalo sauce over the top, then bake for another 20 minutes. Let cool for a couple of minutes before serving.

Level-Up Ideas:

  • Add different vegetables: try adding broccoli, peppers, green beans, etc.
  • Make it extra spicy: burn your mouth by adding extra spice to the buffalo sauce
  • Make it creamy: use creamy buffalo sauce and/or add cheese on top

Leftovers/Meal Prep: Store in the fridge to keep fresh for the next few days. Great to use with salads, pastas, or anything you want! It can be both the star or the sideshow of any dish.
