FANCY CORNED BEEF HASH

Corned Beef Hash:
(I used the Hormel - Mary
Kitchen brand, homestyle)
Filling:
Butternut Squash (roasted)
Eggplant (roasted)
Spinach
Toppings:
Egg (optional)
(Pickled and/or fermented
veggies of your choice)
You will need:
Large pan
Baking dish
Cooking oil
Directions:
Filling: Roast the butternut squash and eggplant with cooking oil and seasoning (look at the spicy lemon bake for general roasting instructions). In a large pan cook the corned beef hash according to the directions, adding in the roasted vegetables and spinach, let that all combine.
If you are topping with an egg: Fry egg in the same pan to get the same flavors into your egg.
Assembly: Take a serving of the corned beef hash mixture and top it with some of your favorite vegetables. I like to use kimchi, Korean cucumbers, olives, sauerkraut, coleslaw, fermented carrots, etc. Add your fried egg on top, if you like more runny yolk it works as a tasty sauce.
Level-Up Ideas:
- Personalize the vegetables: add or substitute in kale, bell peppers, onions, etc.
- Make it spicy: (good option with kimchi) add jalapenos, spices, infused oils etc.
- Change the eating style: mix in with rice, eat as a taco/wrap, or make into a salad
Leftover/Meal Prep: Separate corned beef hash mixture into single serving containers, top with your choice of toppings (If you want an egg on top, cook that before eating). Store in the fridge.
