STRAWBERRY OATMEAL COOKIES
(Makes a dozen cookies)
Wet:
1 Egg
2 tsp vanilla
⅓ cup honey
⅓ cup coconut oil
Dry:
1 cup oats
1 cup coconut flour
⅓ tsp baking soda
¼ tsp salt
Mix Ins:
Strawberries
Pecans (chopped)
You will need:
Large bowl
Parchment paper
Baking sheet
Directions:
Batter: In a bowl, mix dry ingredients, then add in wet ingredients and mix. Then throw in the add-ins, mixing until just combined (do not over mix, but make sure everything sticks together).
Baking: Preheat the oven to 300. On a baking sheet with parchment paper, place each cookie batter ball (about 1-2 tbsp of batter depending on your preferred cookie size) about 2 inches apart. After they are placed lightly press on the tops to flatten them- because these are oatmeal cookies, they do not spread the same way other cookies do. Bake for about 18-22 minutes or until nice and golden on the top.
Level-Up Ideas:
- Use different fruits: blueberries, apples and cinnamon, raisins, cherries, etc.
- Use different nuts: almonds, walnuts, nut butters
- Make chocolate oatmeal cookies by adding your favorite cocoa and chocolate
Leftovers/Meal Prep: You can store these cookies in the fridge and eat them cold or warmed up.
