SWEET POTATO WAFFLES
Wet:
1 sweet potato
2 cups almond milk
⅓ cup coconut oil
2 tbsp nut butter
2 tbsp hot honey*
1 tbsp honey*
Splash of vanilla
*For a vegan option use maple syrup and some spices or hot sauce
Dry:
2 cups oat flour
⅓ cup nuts (chopped)
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp clove
You will need:
Waffle maker
Blender
Bowl
Directions:
Sweet potato: Wash first and then poke with a fork. Put into the microwave for 2-3 minutes, then flip and microwave for another 2-3 minutes.
Batter: In a blender put all of the wet ingredients. Scoop out the sweet potato from the skin and put into the blender. Blend everything until smooth. In a bowl mix in all of the dry ingredients, then add in the blended wet ingredients, mix until fully combined. Put into the fridge for a few minutes (when the batter is cool it helps get a crisper edge on the waffle).
Waffles: Cook waffles based on the waffle maker. Top waffles with your favorite waffle toppings.
Leftovers/Meal Prep: I recommend saving the batter in the fridge, making waffles fresh one serving at a time. You can also make the waffles ahead of time and store them in the fridge or freezer.
